Saad M. Alazmi sets the fun tone of this cookbook in the Introduction – ‘Dutch oven cooking is a social thing and is about the delights of feasting in groups. Subsequently, the majority of the recipes in the book are to serve 6 to 14 individuals utilizing a huge 10 to 14 diameters Dutch oven, basically scale things down when cooking for less… Dutch oven cooking is about having a ton of fun and exploring different avenues as regards food.’In explaining the concept of Dutch Oven Cooking, we learn ‘The basic difference about indoor and outdoor Dutch ovens as you will later come to know and understand is in the area of temperature measurement and regulation and the type and size of the Dutch ovens being used. In general, most of the recipes require a specific size of the Dutch oven and the particular number of coals to be placed on the top and bottom of the oven. The recipe is a sum of two coals for every inch of diameter using a 350-degree temperature. Therefore, a 10-inch Dutch oven would require a sum of 20 coals between the bottom and top. Thirty coals would produce around 400-degree temperature…Dutch ovens are additionally cast iron. Once in a while, they may be a redesigned “European” style, but the fact remains that they are still cast iron and therefore need specific care.’ With drawing and photographs we learn all aspects of the actual Dutch oven, its care, its ‘seasoning’, and it s cleaning.
