Cuisines Of Portuguese Encounters

Cuisines of Portuguese Encounters is one of the first cookbooks to encompass the entire Portuguese-speaking world! Enriched by over 70 new recipes, the expanded edition is a fascinating collection of 279 authentic recipes that illustrate how Portugal and its former colonies influenced each other's culinary traditions. In the sixteenth century, Portuguese navigators circled the globe, conquering new lands to build one of history's largest empires, and at the same time carrying and introducing crops, food products, and a variety of culinary cultures to all corners of the earth. Fueled by the curiosity of a cultural anthropologist and world traveler, this fascinating collection of 279 recipes is the first cookbook to encompass the entire Portuguese-speaking world and explain how Portugal and its former colonies influenced each other's cooking traditions. The author also explores the impact of the Moors and Sephardic Jews, who added unique contributions to the culinary history of the Portuguese empire. This appetizing volume is rearranged geographically, containing staples from Portugal, Angola, Brazil, Cape Verde, East Timor, Goa, Guinea-Bissau, Macao, Malacca, and more. Each chapter is a mini-cookbook of a particular country or region, complete with introduction to the cuisine, culinary history, and recipes. From famous dishes like spicy pork vindaloo from Goa, the classic bacalhau of Portugal, and all varieties of feijoada, to lesser-known treats like Guinean oyster stew and coconut pudding from East Timor, this cookbook has something for every adventurous gastronome. The 8-page section of color photographs brings the recipes to life! Menus for religious holidays and festive occasions, a glossary of terms, a section on mail-order resources, and a bilingual index will assist the home chef in celebrating the rich, diverse, and delicious culinary legacy of this old empire.

From Brazil and Cape Verde to Goa and Portugal, chapters survey different regions in addition to offering recipes unique to that region. The blend of culinary history and recipe is outstanding, making for an excellent pick for any library strong in international cuisines and history.Diane C. DonovanCalifornia Bookwatch

This is a GREAT cookbook with a touch of history thrown in as an extra treat before each chapter. Richly photographed and very interesting to browse. I bought six of these, and gave all but one away to relatives. We are of Portuguese/Chinese/South East Asian ancestry, and recognized many recipes, even those from Africa and Portugal itself. I am a herbivore, but found many recipes here that met my culinary and cultural needs. My relatives are carnivores (okay, one may be an omnivore) and they loved the more meaty treats in here. Even I was moved reading about these dishes, remembering them from childhood.

Purchased this for my mother as a gift. My wife's family is Brazilian, and we are both historians. The book is a very nice combination of recipes and history. The book itself is well produced. This is a cook book with many recipes, but they all look good and none are overly complicated. Many other cook books with Brazilian recipes require ingredients that are hard to find. That is not the case here, though the dishes do not seem any less authentic because of that. Would recommend it to anyone who has been to a Portuguese-speaking country and enjoyed the food, or anyone who wants to cook something different.

this cookbook is excellent because it tells you the food history and short anthropological perspective behind the recipes. Each chapter is divided from each country and how the Portuguese influenced their food culture. Of course, trade is a big step for spices, chilies to spread across these countries through the sea or land. The index has both Portuguese and English languages. I would recommend this as a gift or if you're interested in cooking for friends and family.

Recipes are really hit or miss. I don't think there is anything wrong with the recipes it's just some have a cumbersome flavor. Especially the ones out of Africa. But I would suggest getting it if you want to try new things.4 stars because I wish it had a picture for most recipes. The only improvement I could see.

Very interesting and unique cookbook . Each recipe is simple to prepare and delicious. Only problem is finding some of the ingredients like manioc flour and palm oil in my area. Will probably have to look online or substitute some of ingredients.
